To Whom It May Concern,
Thank you for considering my proposal to operate my health inspected commissary
kitchen out of the existing structure on my property at 69 Layen Road, Ithaca, NY 14850.
You have asked me to write a letter attesting to my plan to meet the requirements laid
out in sections 901-943 of the zoning code. To that end, I would litre to reiterate that I
am proposing to use the above mentioned property to prepare and store various food
items which will be sold at locations throughout the county (The Ithaca Farmer's Market,
Cornell University Farmer's Market, Grass Roots Festival, etc... ). There will be no retail
sales from the property and very little traffic, as I will be accepting only a weekly supply
delivery.
There will be no cosmetic changes made to the exterior property, other than the removal
of several vehicles which are not related to the proposed business use of the property.
Changes made to the interior will include those required by the health department (a
three bay sink, and a hand sink, and the installation of stainless steel countertops, and
refrigeration units). Adaptations to the current water system may include an ultra -violet
light disinfection unit, and a grease trap, as well as any other modifications required by
the Tompkins County Health Department.
I have read the sections of the zoning code referred to above, and I can attest to my intent
to abide by all of the requirements and limits outlined therein.
I look forward to working cooperatively with you and my neighbors in this endeavor.
