Giblets With Rice (Economy dish - will serve 3
to ''4 people.) Chicken
Start with about 1'z lbs'. of gizzards and hearts.`
Wash and cut each gizzard in 4 parts.Saute in
Wesson oil about 20 minutes, add 3 stalks of cut
up celery, leaves too. 1 large onion and diced
pepper if you so desire. Fry this all veryslowly
with a cover on. Stir frequently. After it becomes
dry, add..a cup of water and continueto simmer.
Keep addinga: little water and continue simmering
for about 3 hours or untilgiblets are tender.
