(6 oz.) semi-sweet brown sugar chocolate pieces 1 tsp. soda 1 c. chopped pecans Mix caramels in evaporated milk in heavy sauce- pan. Cool slightly. Combine remaining ingredients, except chocolate pieces, in large mixing bowl. Press half of crumbs into bottom of greased 13 x 9-inch pan. Bake at 3500 for 10,minutes. Remove from oven. Sprinkle with chocolate pieces and pecans. Spread carefully with caramel mixture. Sprinkle with remain- ing crumbs. Bake 15 to 20 minutes ;longer or until brown. Chill 1, to 2 hours. Cut in bars. June A. Smith MOLASSES CANDY 1 c. molasses 1 small piece butter 1 c. brown sugar 1/4 tsp. soda 1 Tbsp. vinegar Mix together. Boil, without stirring, until it hardens when tested in cold water. Add 1/4 teaspoon soda. Remove from fire. Pour into buttered pan. Cool enough to handle. Pull by hand until candy begins to harden. Cut in 1-inch lengths. Helena Schaber TAFFY 1 lb. white sugar 1 tsp. cream of tartar in 1/2 pt. water water 1 tsp. vanilla Stir together and boil until it hairs when tested in cold water. Do not stir while boiling. Helena Schaber 867-4 169 FANTASY FUDGE 3 c. sugar 1 (7 oz.) jar marshmallow 3/4 c. margarine cream 2/3 c. evaporated milk 1 c. chopped nuts 1 (12 oz.) pkg. semi- 1 tsp. vanilla sweet chocolate pieces Combine the sugar, margarine and milk in heavy 2 1/2-quart saucepan. Bring to full rolling boil. Stir constantly. Continue boiling 5 minutes over medium heat. Stir constantly. Remove from heat. Add choco- late pieces until melted. Add marshmallow cream, nuts _m and vanilla. Beat well until blended. Pour into greased 13 x 9-inch pan. Cool at room temperature. Cut into squares. Makes approxi- mately 3 pounds. Adeline Nemi CAROL'S COCONUT CREAM EGGS> 2 or 3 c. mashed 1 lb. confectioners sugar, potatoes sifted 4 c. coconut (flaked) ' 1 tsp. almond extract Melt down 2 bags chocolate chips for coating. Combine all ingredients. Shape into eggs, any size you desire. If mixture is too soft, refrigerate and then shape. Refrigerate 1/2 hour before dipping in melted chocolate. Let cool. Can decorate. Stir in raisins and nuts. Form into balls and roll in coconut. Remove from heat and add vanilla and soda. Toss over corn; mix. Bake on "large roasting pan in 2500 oven, which has been preheated. Stir every 15 minutes for 1 hour. Salted peanuts may be added. Add butter, sugar and salt. Heat to boiling. Start timing when mixture starts to boil or bubble around the edges of pan. Cook 6 minutes. Stir constantly. Remove from heat and add marshmallow cream, chocolate pieces and vanilla. Stir vigorously 1 minute. Pour into buttered 8 x 10-inch pan. Then pour cherry pie filling on top of above mixture. Eleanor Menzies LEMON PIE 3 c. boiling water rind and juice from 2 9 Tbsp. cornstarch lemons 2 c. sugar juice from 1/2 orange 6 egg yolks and 2 2 Tbsp. butter whites, beaten together Heat water and sugar. Then add cornstarch, which is mixed with some cold water. Cook until thick and clear, stirring continually. Add the yolks and whites that are beaten together. Add lemon juice and rind and orange juice. Cook, stirring constantly, until thick. Remove from heat and add butter. Put in two 9-inch pie crusts Top with meringue and bake. Mix baking mix, milk, brown sugar, margarine and nutmeg. Spread in ungreased square pan, 9 x 9 x 2 inches. Pour in filling in pan. Bake until golden brown, about 40 minutes. Press 1/2 of crumbs in 9-inch square pan Cover with rhubarb. Pour sauce over rhubarb. Bake in 3500 oven for 1 hour. Cut in squares. Serve warm with whipped cream. Press in 9 x 13-inch 'pan. Bake 15 minutes at 3500. Watch carefully. Combine rest of ingredients. Beat until fluffy, then add rhubarb. Spread on top of baked crust., Bake 45 minutes at 3500. Joyce Dixson GINGER PEACH DELIGHT 16-20 gingersnaps, 2 Tbsp. light brown sugar crushed 1 large can sliced peaches, 1/4 c. margarine, drained melted 1/4 c. chopped nuts 174- Arrange peaches in baking pan. Sprinkle with gingersnaps. Mix margarine and brown sugar. Pour over top of crumbs. Sprinkle with nuts. Bake in 3500 oven for 25 to 30 minutes. Serve warm with whipped cream Barbara Coats FAST BERRY FREEZE 2 c. vanilla wafer 1 Tbsp frozen orange crumbs juice concentrate, thawed 1/2 c. finely chopped 2/3 c. dairy sour cream filberts or walnuts 1 c. blueberries, rasp- 6 Tbsp. melted butter berries or hulled straw- 1 egg white berries In a bowl, stir together wafer crumbs, nut- meats and butter. Press mixture together in bottom and sides of 14 paper-lined 3-inch muffin pan cups. Using electric mixer at high speed, beat egg whites, sugar and orange juice in bowl until stiff peaks form. Fold in sour cream. Then pour berries into egg white. Spoon mixture into crumb-lined cups. Cover. Freeze 2 hours or until firm. Garnish with whole berries. Makes 14 servings. Florence Laue LEMON FLUFF 1 (14 1/2'oz.) can 1/4 c. lemon juice evaporated milk 1 c. sugar 1 (4 oz.) pkg. lemon- 2 1/2 c vanilla wafer flavored gelatin crumbs or graham 1 3/4 c. hot water cracker crumbs Chill unopened can of milk until icy cold, about 3 or 4 hours. Dissolve gelatin in hot water. Chill until partially set. Whip until ;light and fluffy. Add lemon juice and sugar. Whip chilled milk and fold into gelatin 'mixture. Line bottom of 9 x 13-inch pan with crumbs. ` Pour gelatin mixture on top. Add remaining crumbs on top. Chill until firm. Cut in squares and center each with a cherry. Sarah Jane Mitchner 867-4 175- ORANGE SPONGE Bake old-fashioned sponge cake in tube pan. -- Custard: 2 1/2 c. granulated 5 eggs, well beaten sugar 1 1/4 c. wager 7 1/2 Tbsp. flour Mix together in top of double boiler. Cook until thick. 1/4 ,c. butter 9-12 oranges 2 tsp. vanilla Add butter. Cool and add vanilla. Peel the oranges, taking out seeds and pithy part. Add sec- tions to custard when thoroughly cooled. (If custard is quite thick, some of the juice may be added.,) When - ready to, serve, cut cake into serving slices. Spoon, custard onto slices. Minute rice 4 c. sugar 1/4 tsp. salt 1 egg;, beaten 1/4 c raisins 1/4 tsp. cinnamon 1 (3 1/2 oz.) pkg.° 1/8 tsp. nutmeg vanilla pudding (not 1/4 tsp. vanilla instant) Combine all ingredients (except vanilla, cinna- mon and nutmeg) in saucepan. Cook and stir over medium heat until mixture comes to full boil. Remove from heat. Cool 5 minutes, stirring once or twice. Add vanilla. Pour into bowl. Place waxed paper directly on surface of hot pudding mixture. Serve warm, or cool to room temper- ature and then chill about 1 hour before serving. Sprinkle with cinnamon and nutmeg just before serving. Serve with sauce made of: 1 c. white or brown 1 Tbsp. butter sugar or 1/2 each 1 c. hot water 1 Tbsp. flour Cook until thickened. Mrs. Walenbeck RICOTTA PUDDING 2 Tbsp. seedless 2 Tbsp. flour raisins 3 egg yolks 1 (15 oz.) container grated rind of 1 orange Ricotta cheese 3 egg whites, beaten until 3 Tbsp. sugar stiff dash of salt cinnamon Preheat"oven to 3500. `' Soak raisins in warm water to cover until soft Combine Ricotta cheese' with sugar, salt, flour and egg yolks. Blend thor- oughly. Add orange rind and drained raisins. Fold in egg whites. Fill a buttered 2-quart casserole dish 2/3, full. Bake 30 minutes. Remove from oven and allow to cool 10 minutes before inverting onto serving dish. Dust lightly with cinnamon. Camille Predmore CROCK-POT SCANDINAVIAN RICE PUDDING 4 eggs, beaten 1/2 tsp. cinnamon 1'qt. milk, scalded 1/4 tsp. nutmeg l c, sugar 2/3 c. chopped raisins 1 tsp. vanilla 3 3 1/2 c. cooked rice 867-4 -177- To obtain this amount of rice, use: 2 c water 1/2 tsp. salt When water is boiling, add 1 cup rice and `cook 20 minutes. Add cooked rice to remaining ingredients and put in slow cooker. ; Place pot on high setting and stir after 1 hour of cooking. Reduce heat to low and keep warm until serving. Carol Baker ITALIAN RICE PUDDING 4 c. milk dash of salt 3/4 c sugar 2 eggs, beaten 1/2 c. long grain rice 1 tsp. vanilla 1/2 c. water cinnamon Combine milk, sugar, rice, wager and salt in heavy 4-quart saucepan. Bring to boil. Reduce heat T and simmer, uncovered, ;50 to 60 minutes, until rice is tender and desired consistency is reached. Stir frequently during cooking. Remove from heat. Stir in eggs and vanilla. Pour into 1 1/2-quart serving dish. Sprinkle with cinnamon. May be served warm or chilled with milk or whipped cream,. Makes 6 servings. Dottie Moe NEVER-FAIL PIE CRUST 4 c. flour 1 314 c. lard or Crisco 1 tsp. baking powder 1 egg -- 1 tsp. salt 1/2 c. cold water 1 Tbsp. sugar 1 Tbsp. vinegar Mix first 4 ingredients into bowl. Cut in lard. Add egg, water and vinegar together. Gather together and press into ball. Divide into 6 portions. Dough may be placed in airtight containers and -- frozen. Carol Baker -178- AUNTIE "_EV'S LEMON MERINGUE PIE' 1/2 c. juice of fresh 3 eggs, separated lemons (do not grated rind of 1 lemon strain, but remove 1/4 tsp. salt pits) 1 Tbsp. butter 1 1/4 c. sugar 1 baked pie shell 4 Tbsp. cornstarch Add water to lemon juice to make 1 cup. Add another 1/2 cup water. Put in top of`double boiler. Mix the sugar and cornstarch together and put in double boiler. Add egg yolks and lemon rind. Mix well, making sure eggs are well broken in. Add salt and butter. Cook until real thick, stirring occasion- ally. Pour into baked pie shell. Cover with meringue. Meringue ` 3 egg whites 3 Tbsp. sugar pinch of salt Beat the egg whites stiff. Add salt and sugar. Spread on pie. Sprinkle with sugar. Put in 3000 oven until baked, about 20 minutes. Joan Johnston HERSHEY BAR PIE 1 large 8 oz. Hershey 1 egg white bar with almonds 1/2 pt. heavy cream 1/2 c. milk 1 (9-inch) pie shell (gra- 28 large marshmallows ham crackers too sweet), or 280 small ones Mix Hershey bar with milk and marshmallows, ` then cool. Place about 5 cups sliced"apples in dish.° Mix together: 1 tsp. cinnamon 1 c. sugar 1 tsp salt` 113 c. soft butter 3/4 c. flour 1/4 c. water - Rub together. Put this over the apples. Bake 40 minutes at 3500. Serve warm with sauce or Cool Whip or serve plain. Stir in sugar and flour until well blended. Stir in nuts and chips. Pour into pie shell. Bake at 3250 for 1 hour; or you can use graham cracker pie shell, too. Pour on un- — baked crust. Arrange peach halves, one layer only. Sprinkle 2/3 cup sugar on top and generous ;portion of cinnamon. Pour evaporated milk over all. Bake in 4250 oven for 15 minutes; reduce to 3500 for 45 minutes or until, done. C hill. Ricotta cheese whipped 3/4 c. sugar 3 egg whites, beaten 3 egg yolks stiff Mix together the Ricotta cheese, sugar, egg yolks and vanilla. Fold in whipped heavy cream, then fold in beaten egg whites. Curley 182 NEVER-FAIL PIE CRUST (Makes Four 10-Inch Crusts) 4 c. all-purpose flour 1 Tbsp. sugar (which has been lightly 2 'tsp. salt spooned into cup) Then add 1 3/4 cups Crisco to the above (with fork make mixture into crumbs). Beat in a small bowl: 1/2 c. water 1 egg 1 Tbsp. vinegar Combine' this mixture to above flour-Crisco mix, stirring with a fork until everything is moistened. Divide into 4 equal portions. Mix in the lemon juice. Pour over larger bowl of ice and water. Beat with rotary beater until fluffy and thick. Blend in the Cool Whip. Chill until firm, about 2 hours. Bake at 4500 for 12 minutes, until done. Pour into the hot milk. Beat well with an egg beater and keep hot over boiling water. Judson Payne GOLDEN DELIGHT PUNCH 2 large cans orange 1 small' can apricot juice concentrate nectar 867-4 -187- 3 qt. ginger ale or 1 qt. orange sherbet 7-Up Mix the orange juice (unfrozen, but not diluted) , ginger ale and apricot nectar in a large ,bowl. Scoop out orange sherbet and float on top of punch, letting it melt slightly before serving. Serves about 25 people.
