Spoon in pie shell. Bake at 350° for 30 to 35 minutes. I A mock pecan pie; can fop with whip cream or ice cream. Eunice Beardsley LEMON BERRY PIE 4 oz. cream cheese 1 prepared graham cracker crust 1 Tbsp. milk 1 pt. strawberries, halved 1 Tbsp. sugar 2 c. cold milk 2 tsp. lemon peel, grated 2 (4 serving size)pkg. Jell-0 vanilla 1 Tbsp.lemon juice or lemon instant pie filling 1 (8 oz.)Cool Whip Cream cheese, milk, and sugar in medium bowl until smooth. Stir to lemon peel and juice. Stir in I1/2 cups of topping. Spread evenly in bottom of crust.Press strawberry halves into cheese mixture, reserving several for garnish. Pour 2 cups milk into large bowl.Add pudding mixes and whip.Spoon over berries.Refrigerate 4 hours or until set.Garnish with strawberries.Store in refrigerator.Makes servings. Ana Kastenhuber BUTTERSCOTCH PEANUT BUTTER PIE 8 graham crackers, crushed 1 tsp. unflavored gelatin 2 Tbsp. + 2 tsp.diet margarine 2 c. skim milk 1 pkg. butterscotch low calorie 1/4 c. chunky peanut buffer pudding 'h c. Cool Whip Preheat oven to 350°. In small bowl,combine crumbs and margarine, mix- ing thoroughly. Using back of spoon, press in 9 inch pie pan. Bake for 8 minutes. Remove to wire rack to cool In 1 quart saucepan,combine pudding mix and gelatin;add milk and cook over low heat,stirring constantly, until mixture comes to a boil.Add peanut butter and stir.Remove from heat and let cool to room temperature.Spread in prepared ,717-94 65 J crust. Cover and refrigerate until chilled. Just before serving, spread with Cool Whip. Makes 4 servings. Mary Owens ELDERBERRY PIE 3 c. elderberries 3 scant Tbsp. Minute tapioca 2/3 c.sugar 1 c. unsweetened applesauce 1 Tbsp. lemon juice 1 Tbsp. butter Parboil and drain elderberries.Add other ingredients(reserving butter)and - stir. Pour into unbaked lower crust and dot with butter.Bake at 450° for 20 minutes. Reduce heat to 350' for 25 minutes or longer if necessary. This was Warena Ramsey's recipe. Gladys Willis DELICIOUS LEMON PIE 3 eggs; 1 can condensed milk 3 lemons 1 small box vanilla wafers 3'Tbsp. sugar Oleo or butter Squeeze lemons; add grated rind of 2 lemons to the juice. Add juice to beaten egg yolks and add milk and beat well. Roll vanilla wafers very fine. Use melted oleo to crumbs.Mix well;press into pie fin.Add the filling;cover with beaten egg whites with sugar. Baker's semi-sweet_chocolate 2 bananas, sliced 2 Tbsp. milk 23/4 c. milk 1 Tbsp. oleo or butter 2(4 serving size)pkg. banana or 1 (G oz.)prepared graham cracker vanilla instant pudding mix crumb crust 11/2 c.Cool Whip Microwave chocolate,milk,and margarine in medium bowl on HIGH for 1 to 11/2 minutes,stirring every 30 seconds.Sfir unfit chocolate is completely melted. Spread evenly in crust. Refrigerate for 30 minutes or until chocolate is melted.Ar- range banana slices over chocolate. Pour milk into large bowl; add pudding mixes.Beat with wire whisk 1 minute. Let stand 5 minutes. Spoon over bananas; spread with Cool Whip. Refrigerate 4 hours. Serves 8. DUTCH APPLE PIE 4 to 5 tart pie apples 1/2 tsp.cinnamon 1/2 c. granulated sugar Pastry for single crust pie Topping: :/4 c.flour 1/2 tsp. cinnamon 1/2 c.sugar 6h `Line 9 inch pie pan with pastry dough; flute edge.Peel and slice apples to fill pie pan. Sprinkle with 2 teaspoons lemon juice, sugar, and cinnamon. Rub to- gether topping ingredients until crumbly;spread over top of apples. Bake at 425° for 10 minutes;reduce temperature to 350' and bake until crumbs are brown and apples are soft- about 45 to 60 minutes.
