EASY SWEET ROLLS
1 pkg.yellow cake mix(without 2 1/2 c. hot water
pudding) butter
2 pkg.dry yeast brown sugar
5 c.flour,sifted cinnamon
Mix well the cake mix, yeast and flour. Stir in hot water. Let
rise until double. Mix down and roll into rectangle. Spread with but-
ter. Sprinkle with brown sugar and cinnamon. Roll and cut into
1 lh-inch slices. Place in pan. Let rise (about 1 hour). Bake at 375°
for 25 minutes.

UKR.AINIAN NUT OR POPPY SEED ROLL
6 c.flour 1 c. sour cream`
1 tsp. salt 3 eggs,beaten
3/4 c.sugar 1 cake yeast
1 c.butter or margarine 1/2 c.warm water
Nut Filling:
1 1/2 c.ground nuts 3 egg whites
grated rind of 1 lemon sugar to taste
Poppy Seed Filling:
1 lb.poppy seed,ground 3 egg whites
1/2 c,honey sugar to taste
3 Tbsp.lemon juice
Mix together flour, salt and sugar in large bowl. Cut in butter
as for pie crust. Dissolve yeast in warm water. Work into the flour
mixture the sour cream,beaten eggs and dissolved yeast. Turn dough
out onto a floured surface and knead until smooth. Form into 6 balls
and let rise. Roll;out dough fairly thin to fit a 10 x 15-inch pan.
Spread the nut or poppy seed mixture evenly over the dough. Roll like
jellyroll. Let rise in warm place for 1 ;6 hours. Brush with egg. Bake
in 350° oven for 30 to 40 minutes.
Filling: Combine ingredients. Add enough milk to make it of
spreading consistency.

MUFFINS
2 c.flour i egg

1/2 tsp. salt 3 Tbsp.melted fat
3 Tbsp.sugar
Sift flour. Measure. Put in sifter. Measure and add baking pow-

der,salt and sugar and sift together. Beat egg slightly. Add milk and
melted shortening. Pour liquid mixture into flour mixture and stir
only until dampened. The batter will be lumpy. Put batter in greased
muffin pans and bake.

Spoon batter into paper cups 3/4 full. Sprinkle Streusel Topping
on top. Bake at 350 for 35 to 40 minutes. Makes 18.

5 DOZEN BRAN MUFFINS
6 c.all-bran 5 c.flour
2 c.boiling water 5 tsp.baking powder
1 c.oil 1 tsp.salt
3 c.granulated sugar nuts(optional)
4 eggs dates(optional)
1 qt. buttermilk
Pour hot water over bran in a very large bowl. Let stand while
assembling other ingredients. Beat eggs, sugar and oil together and
add to bran along with buttermilk. Sift flour,soda and salt and blend
into bran mixture. Bake in buttered muffin tins at 375°`for 15 to 20
minutes. You may add nuts and dates and bake in loaf pan for about
1 hour. This batter will keep 6 weeks in covered container in fridge.

MASHED POTATO DOUGHNUTS
3 eggs, beaten 2 c.sugar
1 1/2 c.warm mashed potatoes 1/3 c. melted butter
1 c.buttermilk 6 c.flour
4'tsp. baking powder 1 1/2 tsp.soda
1 tsp.salt 1 tsp. nutmeg
Add sugar to eggs. Beat until well mixed. Stir in potatoes,butter
and buttermilk. Add sifted dry ingredients and mix only until flour
is completely moistened. Chill dough 1 hour. Roll 1/3 of dough at a
time on lightly floured board to 1/2-inch thickness. Cut with floured
cutter. Fry in oil until browned,turning once. Cool and roll in pow-
dered sugar.

SWEDISH DOUGHNUTS
41/2 c.flour 1 c.sugar
4 tsp. baking powder 1 c.mashed potatoes
1/2 tsp. nutmeg 2 Tbsp.,.melted shortening
1/2 tsp.soda 3/4 c.sour milk

3 beaten eggs
Sift flour. Measure and sift again with baking powder,nutmeg,
soda and salt. Beat eggs until fight. Add sugar,potatoes,shortening,
sour milk and vanilla. Combine the two mixtures. Roll out on floured
board. Cut out with doughnut cutter and fry in deep fat. Dust with
powdered sugar as needed.

DANISH PUFF
1 c. butter or margarine 1 tsp.almond extract
1 c. flour 1 c.flour
2 Tbsp. water 3 eggs
1 c.water chopped nuts
Sugar Glaze:
1 1/2 c. confectioners sugar 1 1/2 tsp.vanilla
2 Tbsp. butter, softened 1 to 2 Tbsp.warm water
Cut 1/z cup butter'in flour. Sprinkle 2 tablespoons water over
mixture; mix. Roll into ball. Divide in half. On ungreased baking
sheet, pat each half into a strip 12 x 3-inch. Strips should be about -- -
3 inches apart. Heat 1/z cup butter and 1 cup water to a rolling boil
in medium saucepan. Remove from heat and quickly stir in extract
and flour. Stir vigorously over low heat until mixture forms a ball,
about 1 minute. Remove from heat. Beat in eggs all at once until
smooth and glossy. Divide in half. Spread evenly over strips. Bake
50 to 60 minutes in 350° oven until topping is crisp and light brown.
Cool. Frost with glaze and sprinkle with nuts.

CORN FRITTERS
(With Green Corn)
12 ears corn 1 scant tsp.salt
3 egg yolks 3 egg whites
1 tsp. flour butter for frying
Grate 12 ears of corn,then beat the egg yolks with flour and salt.
Beat the whites thoroughly. Mix the grated corn and yolks,then fold
in the beaten whites. Fry in butter like pancakes and serve hot.

CHEESE KUCHEN
1 loaf frozen bread 1 egg yolk
1 (8 oz.)pkg.cream cheese 1 tsp.vanilla
'/a c.sugar
Defrost a loaf of frozen bread dough. It takes about 1 hour or
you can defrost in microwave. The dough shouldn't rise,just defrost,
so you can put your;fingers through it. Spread or roll into a rectangle.
Cut slits,about 16 to 20,on each side of the rectangle. Mix other ingre-
dients with a'mixer and spread down center of dough. You can top
the filling with fruit pie filling or jam. Bring slits up over the filling
one from each side. You can cross them or just lay up over filling.
Place kuchen on greased cookie sheet and bake at once. Don't let rise.
Bake at 375°for 15 to 17 minutes.-When done,drizzle with lOx sugar
glaze.

BAGELS
41/4 to 4 1/2 c.all-purpose flour 3 Tbsp.sugar
2 pkg.active dry yeast 1 Tbsp.salt
1 1/2 c.warm water i Tbsp.sugar
In mixer bowl,combine 11h cups of the flour and yeast. Combine
warm water, sugar and salt. Pour over flour mixture. Beat at low --
speed for 1/z minute. Beat 3 minutes at high speed. Stir in as much
of the remaining flour. Turn out onto lightly floured surface. Knead
in enough of the remaining flour to make a moderately stiff dough.
Knead until smooth and elastic (5 to 8 minutes). Cover. Let rise 10
to 15 minutes. Separate into 16 portions. Shape into smooth balls.
Punch a hole in center of each. Pull gently to enlarge hole. Place on
greased sheets. Cover. Let rise 20 minutes on each side (don't get
brown). Heat 1.gallon water. Add one tablespoon sugar to boiling
water. Reduce heat. Cook bagels 4 or 5 at a time for 7 minutes,turn-
ing once. Drain. Place on greased sheets. Bake in 375° oven for 25
to 30 minutes.

SPICY APPLE COOKIES
2 c.sifted enriched flour 1 c.seedless golden raisins
1 tsp. baking soda 1 (6 oz.)pkg.butterscotch pieces
1/2 tsp.iodized salt 1 1/4 c.firmly packed light brown
1 1/2 tsp.ground cinnamon sugar
1/2 tsp.ground nutmeg 1/2 c.butter or margarine,
1/2 tsp.ground cloves softened
1 1/2 c. pared,cored and chopped 2 eggs,at room temperature
tart apples 1/4 c.apple juice
1-c.chopped walnuts(optional)
Sift together flour, baking soda, salt and spices. Stir in apples,
walnuts,raisins and butterscotch pieces. Combine brown sugar and
butter or margarine;beat until creamy. Add eggs and apple juice to
sugar-butter mixture; beat until blended. Gradually stir into flour
mixture. Drop by tablespoon onto well-greased cookie sheets. Bake
in preheated 400' oven for 8' to 10 minutes. Remove cookies from
sheets immediately. Cool on wire racks. Makes about 5 dozen.

1 3/4 c.sifted flour 3/4 c.shortening
1/2 tsp. baking powder 1 c.sugar
1 tsp.soda 1 egg(unbeaten)
1/2 tsp.salt 1 c.thick,sweet applesauce
1 tsp.cinnamon 1/2 c. raisins
1/2 tsp.nutmeg 1/2 c.chopped nut meats
1/2 tsp.cloves
Sift flour once. Add baking powder, soda, salt and spices and
sift again. Cream shortening. Add sugar and cream well. Add egg
and beat well. Add flour alternately with applesauce, mixing thor-
oughly. Add raisins and nut meats and blend. Drop from teaspoon
on greased baking sheet 2 inches apart. Bake in moderate 375' oven
15 minutes or until done. Makes 3 1/2 dozen cookies.

Cream together sugar,shortening and vanilla. Beat in pudding
mix and egg. Sift together flour, baking powder and salt. Add to
creamed mixture. Stir in rolled oats. Form into balls. Flatten with
fork on greased cookie sheet. Bake in a 375' oven for 12 minutes.

Put first 4 ingredients into a pan and boil for l minute. Remove ---
from heat, then quickly beat in vanilla,peanut butter, oats and nuts.
Drop by teaspoons onto waxed paper. Cool for 30 minutes.

GRANDMA PURDY'S CHOCOLATE DROP
COOKIES
i egg 1 1/2 to 2 c all-purpose flour
1 c. brown sugar 1/2 tsp.salt`
1/2 c.shortening 1/2 tsp. baking soda
2(1 oz.)sq. unsweetened 1/2 c.sour milk
chocolate 1/2 c.chopped nuts
1 tsp.vanilla
Melt together the shortening and unsweetened chocolate. Beat
egg and brown sugar until light. Add cooled chocolate and vanilla.
Stir until blended. Add combined dry ingredients alternately with the
sour milk to the chocolate mixture.' Stir in chopped nuts. Drop by tea-
spoon 2 inches apart onto a greased cookie sheet. Bake at 350'for 10
to 12 minutes. You may want to bake a test cookie to determine if
more flour is needed. Cookies are to be rounded rather than flat. `

1/2 c. packed brown sugar: 12 oz. chocolate chips
2 eggs 1/2 c.coconut(optional)_
2 tsp.vanilla 1/2 c.chopped nuts(optional)
2 1/4 c.flour
Cream together butter,sugars and vanilla until light and fluffy.
Beat in eggs. Sift together flour, soda and salt; gradually add to
creamed mixture,mixing until well blended. Fold in chocolate chips,
coconut and nuts. Bake at 375° for about 10 minutes or until lightly
browned. Makes about 5 dozen 3-inch cookies.

Beat sugar, shortening, egg and milk together, then add cocoa,
flour,soda and baking powder,which have been sifted together. Bake
in a 350° oven. Ice each cookie with half chocolate and half white
icing, which makes them very delicious.

1 c. lard flour
1/2 c. hot water
Recent Notes:Six cups flour will be needed for a soft,puffy cook-
ie. This is refrigerated for 1 or more hours. Salaratus is baking soda.
Use margarine or other solid shortening instead of lard.
Roll into small balls and press on a greased cookie sheet. Bake
at 375°for 11 to 12 minutes. Makes 9 dozen cookies. A glass dipped
into water,then sugar may be used to flatten the dough before baking.

Cream shortening and sugar;add'egg. Beat well. Mix in molas-

creamed mixture (nuts or raisins may be added). Drop by small tea-
spoons on ungreased baking pan. Sprinkle with sugar. Bake in 375°
oven for 15 or 20 minutes or until done or browned.

*If you lack sour milk, put 1 tablespoons vinegar in the
sweet milk.

1 c. molasses 2 tsp.soda, in'I c. hot water

5 c.flour
Mix and drop by spoonful. Sprinkle with sugar and fill center
with strawberry jam if wanted. Bake in moderate 350' oven on top
shelf for 15 minutes. --

SOFT MOLASSES COOKIES
1/2 c. sugar(brown or white) 1/2 c.water
1 c. molasses 1 tsp.ginger
2/3 c. shortening(very soft) 1/2 tsp.cinnamon
2 tsp. soda 5 c.flour
Chill 1 to 24 hours. Grease cookie sheets. Roll out and use cook-
ie cutter or roll into balls in hand and press down a little. Bake about
13 minutes.
Note: More flour may be needed to make a firm dough. Too
much will make the cookies hard. If oil is substituted for shortening,
use slightly more flour. One cup whole-wheat flour may be substituted
for one cup white flour.

and stir up again. Add shortening and stir up again. Mix in raisins.
Optional: Nutmeats may be added.

Roll out and cut with cookie cutter. Bake at 350'.

AMISH OATMEAL COOKIES
1 1/2 c. raisins 1 1/2 c.shortening
1 c. salted peanuts 3 c. sugar
6 c.flour 3 eggs
3 tsp.baking powder 3 tsp.soda
1 tsp. nutmeg 1 c. buttenmilk
1 tsp.cinnamon- 1/2 c.dark molasses
1 tsp. salt
Grind the raisins and peanuts together. Sift together flour,bak-
ing powder,nutmeg,cinnamon and salt. Cream shortening and sugar;
add eggs and mix well. Add buttermilk,mixed with soda and molas-
ses. Add flour mixture, also oatmeal, raisins and nuts. Mix well.
Drop from teaspoon. Bake at 375°for 8 to 10 minutes. Makes a large
batch.

cookie sheet 1cinch apart. Bake 15 minutes in a moderate 350' oven.

Beat together butter and sugars until light and fluffy. Blend in
egg, milk and vanilla. Add combined`flour,salt and soda; mix wen. ---
Stir in oats,candies and nuts. Drop dough by heaping tablespoonfuls
onto greased cookie sheet about inches apart. Press 2 to 3 additional
candies into each cookie if desired. Bake at 350'for 11 to 13 minutes
or until lightly browned. Cool on cookie sheet about 3 minutes. Makes
2 1/2 dozen.

and centers appear to be done. Allow to slightly cool on cookie sheet

(Fruit Cake)

1 c. molasses 1/4 lb.chopped citron
1 tsp.soda 1 tsp. cinnamon

1 pt.boiling water 1/2 tsp.ginger
Grind pork. Cover with boiling water. Combine all ingredients.
Add flour to make a thin batter. Bake slowly at 300'for 1 hour. Wrap
(when cool). Store in a cool place. Will keep well.

MILDRED'S PAPRIKA CAKE
1 c shortening 1 tsp.salt
1 c.sugar 3 tsp.paprika
1/2 tsp.orange flavoring 1 c.sweet milk '..
1/2 tsp. lemon flavoring 1 c.drained,crushed pineapple
4 egg yolks 1 c. raisins,ground
3 c.cake flour 1 c.chopped nut meats
5 tsp. baking powder 4 egg whites
Cream thoroughly'shortening, sugar, orange and lemon flavor-
ing. Add 4 beaten egg yolks. Sift flour,baking powder,salt and papri-
ka 3 times. Add flour mixture alternately with 1 cup sweet milk. Add
pineapple, raisins and chopped nuts. Fold in 4 beaten egg whites.
Bake 1 hour at 350% (Use pineapple juice for icing flavoring.)

DIXIE CRUMB CAKE
2 c.flour 1/2 c.shortening
1 c.sugar 1 beaten egg
1 tsp. nutmeg 1 c.milk
1/2 tsp.salt 2 Tbsp. molasses
1 tsp.cinnamon 2 tsp. baking powder-
t tsp. cloves 1/4 tsp.baking soda
Sift together into bowl flour, sugar, nutmeg, salt,cinnamon and
cloves. Add shortening,cut in as for pie crust. Set aside 1h cup of this
mixture. Add remaining ingredients to basic mixture. Mix well. Pour
in 8 x 8-inch pan. Sprinkle reserved mixture over top. Bake at 350'
for 40 to 50 minutes.

THREE EGG ANGEL CAKE
1 c.sugar 3 tsp baking powder
1 1/3 c.flour 1/3 tsp.salt
1/2 tsp.cream of tartar 2/3 c.scalded milk - -
3 egg whites 1 tsp.vanilla
Mix well and sift together four times the dry ingredients. Add
very slowly the scalded milk while warm. Beat continually while -
adding milk. Add vanilla. Mix well and fold in egg whites, beaten
stiff. Bake in ungreased cake tin.

WHITE ANGEL FOOD CAKE
4 eggs 1 1/2 c.cake flour
2 Tbsp.cold water vanilla
1 1/2 c.sugar salt
i c. hot water 1/4 tsp cream of tartar
Beat egg yolks with 2 tablespoons cold water. Add sugar,which
has been sifted four times. Add hot water and cake flour,which has
been sifted four times. Add vanilla and salt. Stir thoroughly. Fold in
the beaten whites of four eggs together with 1/teaspoon cream of tar-
tar. Fold carefully as in any angel food cake. Bake in moderate oven
for 1 hour.
Note: Winona Teeter's directions vary slightly. Beat egg yolks
about 7 minutes with 2 teaspoons cold water. Beat egg yolks and sug-
ar, which has been sifted four times. Add hot water and cake flour,
which has been sifted four times. Fold in beaten egg whites to which
the cream of tartar has been added and beaten in salt and vanilla.
Bake 1 hour at 275°. Let stand in cake tin upside down for 1 hour,
then remove.

HOT WATER SPONGE CAKE
(Grandmother Georgia's Recipe)
4 eggs,beaten well 2 tsp. baking powder
2 c.sugar 1 c. boiling water
2 c.sifted flour I tsp. lemon extract
Beat eggs well. Add sugar a little at a time. Sift flour with bak-
ing powder; add slowly. Add boiling water; a little at a time. Add
extract. Bake in angel food pan about 1 hour in moderate oven.

POUND CAKE
i c.butter 1/2 tsp.mace
1 %c.sugar 5 whole eggs(unbeaten)
2 c.sifted pastry flour
Cream butter; add sugar gradually. Cream to a very light and
smooth texture; add mace. Add one egg at a time and work in until
no yolk is seen. Add second,doing the same with all of them;add flour
and mix well. Turn immediately into a tube cake pan, well-greased
and floured. Bake at 350° for 1.hour. Grain'of cake is fine if mixing
is done by hand instead of electric mixer.

314 c.milk 2.eggs
1 Tbsp.vinegar 1`tsp.vanilla
13/4 c.sifted flour 1 tsp.soda
1/2 tsp.salt 1/2 c.cocoa -

1 1/2 c.sugar
Combine milk and vinegar. Sift together flour and salt. Cream
shortening and sugar, creaming well. Blend''in eggs, one at a time.
Combine vanilla and soured milk mixture. Add alternately with dry
ingredients. Blend soda and cocoa with warm water. Add to batter
and mix well. Bake in 8++or 9-inch round layer tins 30 to 35 minutes
in a 350'oven.

"ONE BOWL",DEVIL'S FOOD CAKE
2 c.flour '/2 c.cocoa
1 tsp.double-acting baking 9 Tbsp.(1/2 c.plus 1 tsp.)
powder shortening
1/2 tsp.salt 2 tsp.vanilla
1 tsp. soda 1 c. buttermilk or sour milk
1 1/2 c.sugar 3 large eggs
Sift flour, baking powder, salt, baking soda, sugar and cocoa.
Sift twice more. Add shortening. Add vanilla to milk. Add Z/3 of liq-
uid to dry ingredients and blend. Add eggs(unbeaten). Mix 1 minute
in mixer. Add rest of milk. Pour into two 9-inch greased pans and
bake 25 to 30 minutes at 350'.

BOILED RAISIN CAKE
1 c. sugar 1/2 tsp.salt
1/2 c.shortening '/2 tsp.soda
1/2 c. raisins 1/2 tsp..nutmeg -
1 c.cold water 1/2 tsp.cinnamon

1 tsp.baking powder 1/2 c.chopped nutmeats
Put sugar, shortening,raisins and water in a saucepan and Sim-
mer slowly for five minutes. Let cool. Sift the dry ingredients togeth-
er. Beat all ingredients for 2 minutes. Last, add 1/2 cup chopped
nutmeats, which were rolled in flour.

ORANGE RAISIN CAI
1 orange 1 tsp. baking powder
1/2 c. sugar(for syrup) I tsp. baking soda
1/2 c.shortening i c.sour milk
1 c.sugar 1 c. raisins
2 eggs 1 orange shell
2 c.cake flour
Mix juice of 1 orange and 1/2 cup'sugar. Let stand while mixing
cake and baking. Sift dry ingredients. Grind in food chopper and add
raisins and orange shell last. Bake in 8-inch square pan in 350' oven
for 45 minutes. Pour syrup mixture over top of cake after taking from
the oven. Serve topped with whipped'cream:
Variations: For a heavier fruit cake, add dates, nuts or glazed
fruit.

BOILED RAISIN CAKE
2 c.sugar 1'tsp.cloves
2 c.hot water 1 tsp.salt
1/2 c.butter - 2 tsp.soda
1/2 c.lard 31/2 c.flour
1 lb.seeded raisins` 1 tsp.baking powder
2 tsp. cinnamon
Put sugar,water,butter,lard,raisins, cinnamon, cloves and salt
in a large kettle and boil hard for 1 minute. Remove from heat and
add soda. Beat hard; cool. Beat in flour and baking powder. Bake
for 1 hour in a 300' oven.

BOSS` HOT MILK CAKE
2 eggs,well beaten` 1 tsp. baking powder
1 c.sugar 1/2 c. milk
1 c.flour 1 tsp. butter
Beat eggs and sugar together until creamy. Stir in flour and bak-
ing powder together. Boil milk and butter together and add the last
thing to the mixture.
Note:Lina Jones version calls for sifting flour and baking powder
3 times together.

HOT MILK CAKE
2 eggs 1/2 c. milk
1 c. sugar i tsp.shortening'
1 c. flour 1 tsp.baking powder
1/2 tsp. vanilla - 1/4 tsp.salt _
Beat eggs until light and add sugar;continue beating. Then add
milk and shortening,which has been heated until shortening is melted,
and beat well. Then add the balance of ingredients and continue beat-
ing. This recipe may be made into loaf cake or cupcakes. Bake in
350' oven.

OATMEAL. CAKE
1 c. quick oats 1 1/2 c.flour
1 1/4 c. boiling water I tsp soda
1 stick margarine 1 tsp.cinnamon
1 c.brown sugar 1/2 tsp.salt

2 beaten eggs
Mix oats into boiling water. Let stand 10 minutes. Cream sugars
and margarine. Mix in oats. Beat in eggs and vanilla. Sift together
dry ingredients and nix into oatmeal mixture. Pour into greased 9 x
13-inch pan.'Bake at 350 for 30 to 35 minutes.

1 tsp. salt 1 1/2 c.sour milk
1/2 c. shortening 1 tsp.vanilla

Sift flour, soda and salt together. Cream shortening and sugar
(1 cup) together in a mixing bowl. Mix together 1/2 cup sugar, cocoa,
sour milk and vanilla. Alternately add the flour mixture and cocoa
mixture to creamed mixture. Bake at 350'in large cake pan for 30 to
35 minutes.

2 c. sifted cake flour 1 1/2 tsp, baking soda
2 c.sugar 1/2 tsp. baking powder
3/4 c. Crisco - 1/2 c. milk
1 tsp.salt 3 eggs
%c.cocoa 1 tsp. vanilla
3/4 c. milk
Measure into mixing bowl flour, sugar, Crisco, salt, cocoa and
milk. Beat by hand or with mixer for two minutes. Stir in baking
soda, baking powder,milk, eggs and vanilla. Beat two more minutes.
Pour into two 9-inch layer pans 1 1/2 inches deep. Bake in moderate
oven, 350`, for about 30 minutes.

2 Tbsp cocoa 1/2 c. milk
1 c. flour 1/2 tsp. salt or less
2 tsp. baking powder 2 Tbsp. shortening

Mix all together and put in deep casserole dish. Mix 1 cup brown
sugar and 2 tablespoons cocoa. Sprinkle over the batter and pour 2
cups boiling water over entire mixture. Bake 45 minutes in moderate

CHOCOLATE MOCHA CAKE
1 3/4 c.flour, sifted 2 eggs
1 1/2 c. sugar 1 tsp. cinnamon

1 tsp. baking powder 2/3 c. sour milk or buttermilk

milk. Beat 2 minutes. Add rest of milk,vanilla and eggs and beat for
about two minutes. Bake in 350° oven for about 30 minutes or
